Remember that Apple Butter recipe you posted (Feb22)? Well, it has been a real hit around here... initially, just for the smell. Then the taste... oh, and it was roundly decided to use it on pancakes. Now I`m a bit of a health nut, so I make them with whole wheat and oats and blah, blah, blah (so I can feel o.k. saying "yes, you can have these every day if you want, they are good for you")... and with apple butter, they are more popular than ever, so I got tired of making them daily and made an enormous batch, thinking I`ll just freeze them, then pop them in the toaster as needed. Well, it was a really huge batch, and you know how pancakes are... you really canNOT leave them alone... you have to stand there and wait, flip, wait... I strapped on one of my fanny packs with a pair of socks WIP in it and started knitting. Flip pancakes, knit a couple rows, flip, knit, flip, knit... I have NEVER enjoyed cooking so thoroughly! For the first time ever, it did not seem like a waste of time! I just tossed another batch of fruit in the crockpot tonight... we are now throwing in pears, cherries, the strained fruit leftover from making cordials, coconut milk, you name it... add a bunch of cinnamon sticks and wait for that wonderful aroma (it`s magnificent by morning!). And when the pancake supply gets low... ahh, more knitting time for me! I think of you every time somebody says, "I love that smell!"

Coconut milk? Let me know how that turns out.

I`m laughing, because knitting while making apple butter AND pancakes has got to give you the over-achiever award for the week! So glad you liked the recipe, and hoping it elevates you to goddess status around your house! (These are memories lil Chicklet will carry far into her adulthood! You go, Mama!)
